  • 3-4 potatoes
  • 1.2 liters of water
  • Several sprigs of mint and parsley
  • 1 teaspoon of baking soda (for washing fruits and vegetables)
  • Black pepper to taste
  • 2 eggs
  • 100 grams of yogurt
  • 50 grams of vermicelli

Cooking steps:

  1. Fry sliced ​​onions in heated oil until golden brown.
  2. Add chopped carrots and stew for 3-5 minutes.
  3. Add chopped peppers (yellow, green, red) and stew for another 10 minutes under a lid, adjusting the temperature to medium heat.
  4. Add chopped potatoes and water, simmer under a lid for about 10 minutes.
  5. Remove the lid, add mint, parsley, salt, black pepper, and soda (previously thoroughly washed).
  6. In another bowl, beat eggs, add yogurt, and mix.
  7. Add vermicelli to the soup and pour the egg-yogurt mixture, mix well.
  8. Continue cooking the soup under the lid for another 12 minutes.
  9. Serve hot, garnished with herbs.
